Cabot Clothbound Cheddar, Cabot Creamery aged at the Cellars of Jasper Hill Farm, Greensboro, VT, Cow’s Milk -
From the cellars of Jasper Hill farm, this 12 month old Cabot cheddar took "Best of Show" at the 2006 ACS conference. A clothbound cheddar that everyone can love, this buttery, sharp cheese is rich with fruit, caramelized nuts and an underlying grassiness.

Zamorano, Zamora, Spain, Raw Sheep’s Milk -
Similar to Manchego but crafted exclusively in the province of Zamora from the native Churra sheep. This complex firm cheese has a distinctly nutty tone and sweet grassy, slightly creamy finish.

Bleu d'Auvergne, Auvergne, France, Raw Cow’s Milk -
This slightly sharp, creamy, raw milk DOC cheese from South-central France has been made in the traditional manner since the 19th century. Its spicy blue veins streak through the grassy, herbaceous paste giving it just enough kick to keep you coming back.

Bijou, Vermont Butter and Cheese Creamery, Websterville, VT, Goat’s Milk -
Reminiscent of the small, delicately ripened, Crottins de Chavignol seen in open-air markets all over France, these little buttons start out fresh and tangy with a delicate rind. They continue to age in their special micro-cave packaging, becoming soft and more robust with time.
