This week's pairing is a meeting of old world and new, one of the most traditional iterations of England's famous Lancashire cheese in existence, with Salt Lake City-based Uintah Brewing Company's imperial pilsner: Tilted Smile.

A project from North Coast wherein money is donated to the Thelonius Monk Jazz Institute for every purchase. For those not in the know, Thelonius Monk was a one-of-a-kind piano player, whose powerful and unconventional style is recognizeable upon hearing. "Brilliant Corners" is an outstanding album.
