As we enter patio season here in Chicago, we at Pastoral let our imaginations wander to daydreams of cheese and beer. This week's pairing is a meeting of old world and new, one of the most traditional iterations of England's famous Lancashire cheese in existence, with Salt Lake City-based Uintah Brewing Company's imperial pilsner: Tilted Smile.
What We're Drinking: North Coast Brother Thelonius
A project from North Coast wherein money is donated to the Thelonius Monk Jazz Institute for every purchase. For those not in the know, Thelonius Monk was a one-of-a-kind piano player, whose powerful and unconventional style is recognizeable upon hearing. "Brilliant Corners" is an outstanding album.

Pairing of the Week: Firestone Walker Reserve Porter & Challerhocker
The cheese and Porter pair well together. The hazelnut and macadamia nut notes in the cheese glide easily into the root beer/caramely flavors in the beer. The buttery texture of the cheese needs a little more acidity from the Porter to completely cut through the fat and leave the tongue singing.
