Pairing of the Week: Maxx 365 and Julian Cider
This week's pairing may seem more harvest-inspired at first glance but once you get a taste of it, you'll realize how amazingly light and seasonally appropriate it is. Enjoy!

This pairing is juicy. The stage is set. It makes the mouth water, it makes the crowd cheer for more. The Matador strikes, cutting through the bull with a clean blow of his pineapple sword, revealing the tender steaky meatiness of the bull.

The cheese and Porter pair well together. The hazelnut and macadamia nut notes in the cheese glide easily into the root beer/caramely flavors in the beer. The buttery texture of the cheese needs a little more acidity from the Porter to completely cut through the fat and leave the tongue singing.

For me, the cheese was extremely well rounded. With the wine, it is enveloped in a blanket of slightly more concentrated fruit than I expected. I get a bit of red plums and maybe just a hint of blackberry wrapped around a peanut nuttiness. Wait, scratch that. I'm going with dried boiled peanut nuttiness.
