Pastoral is having a blast with the myriad of events around the city for Chicago Craft Beer Week. We even revamped our beer selection for the occasion! We have brought in several new beers with the intention of further showcasing the broad spectrum of beer styles as they relate to pairing with our broad spectrum of cheese, chocolate, and charcuterie offerings.

Pairing #3

Sixpoint Righteous Ale and Finocchiona

Brewery: Sixpoint Brewery
Style: Rye Beer
Region: Red Hook, Brooklyn, New York

Sixpoint is new to the Chicago market and taking the city by storm. With five highly praised year round brews and prized one-off’s all in can, Sixpoint keeps us interested and amazed by their consistency to push stylistic boundaries and simply make great balanced beers. The Righteous Ale is a rye with real dry, spicy finish. Rich and malty in the mid palate and not overtly hopped this beer is pairing dream. We love to wrap a piece of Pantaleo (Italian sheep milk cheese) with Finocchiona (Salami seasoned heavily with Fennel) and wash it down with this spectacular beer.
