ChocolatmoderneHELLO EVERYONE!!

Sorry to shout, but I’m just so FREAKIN excited about this new chocolate that has just landed on our shelves! Here’s a quick look at these delectably delicious confections:

PRODUCER: Chocolat Moderne, New York, NY

Chocolat Moderne is owned and run by Joan Coukos. She graduated magna cum laude from Duke University with a degree in French and Russian, and received an MBA from UNC Chapel Hill before entering the New York banking scene. In December of 2000 she embarked on a trip to Brussels, and fell under the spell of old world, handmade chocolates. After purchasing antique chocolate molds in a market, she returned to New York and began creating recipes. Her co-workers became her first tasters, and upon receiving repeated accolades, she began taking formal steps to becoming a chocolatier. Her goal was to create a line of visually stunning confections, emphasizing dark chocolate and a modern flavor palate. She has studied chocolate and confectionery arts with a coterie of world-class French, Belgian, American and Swiss chocolatiers in NY and at The World Pastry Forum in Las Vegas, and in 2003 she launched Chocolat Moderne from a loft in New York’s Chelsea/Flatiron neighborhood.

Chocolat Modern bars, 3.5oz, $8.99:

  • Lime: 65% Valrhona chocolate, butter toffee, and lime.
  • Sea Salt: 65% Valrhona chocolate, butter toffee, and Halen Mon Organic sea salt harvested from the Welsh coast.

Chocolat Moderne Bistro bar, 2.5oz, $6.99:

  • Apricote Bask: 9 squares of 65% Valrhona chocolate, apricot, caramel, & Bas Armagnac

Joan sources her chocolate from Valrhona, a French company based in Hermitage, a wine-growing region near Lyon. Founded in 1922, Valrhona is the only still-existing chocolate company founded before World War II.

From their website: “Our chocolate assortments are a vibrant, everchanging cornucopia of offerings. We use the finest French chocolate, Valrhona, featuring high cocoa content and emphasis on growing regions. Our chocolates are covered with extra bitter dark chocolate of 61% cocoa content. The base of high quality ingredients from which we make our fillings includes 5 different varieties of dark chocolate, pistachios, hazelnuts, European style butter, cocoa butter, full cream, granulated pure cane and specialized confectionery sugars, fruit purées, fruit preserves, fresh squeezed citrus juices and zest, milk chocolate, white chocolate, fresh milk, caramelized puffed rice, honey, premium liqueurs, essential oils, teas and spices. We do not use any preservatives or artificial flavorings.”

We recently paired the Apricote Bask Bistro bar with Jasper Hill’s Bayley Hazen blue which was all washed down with a Daisy Cutter from Half Acre Brewing Company . . . sooooo good! Chocolate, cheese, & beer? Yes, please.
