We were very honored to have representatives from Spain’s O-Med visit us last week to teach us more about the production methods behind their fantastic olive oils and vinegars. As well as tasting their unique offerings, we also learned a number of fascinating insights into what makes their products so special.

Our favorite fact about this family-owned, eco-friendly operation is that all of the energy used in the production of their olive oil comes from the crushed pits of their own olives. Very cool . . .
