Pate de Fruit are a traditional French confection sold only in the highest end patisserie and chocolate shops. Not to be confused with the jelly candy we are familiar with here in the US, these are only sweetened by the natural fruit used to make them, toothsome without being chewy and rolled in a sanding sugar. The flavor is so concentrated that each bite is like taking a spoonful of preserves. These come to us from Flora Lazar of Flora Confections & Pastries. Flora cooks fruit purees with pectin and a little evaporated cane sugar, cools it and molds it into perfect little 2 bite squares. She coats them in clear granulated sugar, creating an addicting textural contrast and they are not only beautiful but DELICIOUS. Flora buys her fruit from vendors at the Green City Market, so every fruit in these is grown within 300 miles of Chicago!
