  • MEET THE MEAT MAKERS OF THE PASTORAL ARTISAN PRODUCER FESTIVAL!

    Every year, dozens of artisan producers fill the Chicago French Market for the largest FREE tasting event in Chicago - the Artisan Producer Festival . In addition to cheese-makers and mongers from around the world, there will also be producers of beer, wine, accouterments, and one of our favorite categories - charcuterie. Check out the roster of traditional and innovative charcuterie producers from across the country that will be joining us this year!

    CREMINELLI MEATS

    The Creminelli family has been crafting artisan meats since the 1600s. Their legacy lies in their integrity, sourcing locally produced, organic and all natural ingredients, including heritage meats that are raised exclusively on vegetarian feed without the use of antibiotics.  They'll be bringing Milano, Calabrese, Wild Boar and Tartufo salami to the festival for you to sample.

    Over a century after it was established, H. Forman & Son remains a family concern, the last of the original London smokeries, with Lance Forman, founder Harry Forman’s great grandson, flying the flag for the famous London Cure. Remaining faithful to principles established in 1905 – the freshest salmon, a little salt, just the right amount of oak smoke – he is upholding traditional values and skills that would otherwise have died out long ago. Sample their impeccable side of hand-sliced Scottish Smoked Salmon at the festival.

    After a successful career as a chef in several top Chicago restaurants Chris Eley returned home to Indianapolis in 2007 to open up Goose the Market a neighborhood full service butcher and specialty food shop. Then in 2011 he launched Smoking goose – utilizing classical techniques in new and quirky way yielding a truly unique line of artisan charcuterie. Last year, the fine folks from Smoking Goose showed up to the Artisan Producer Festival with a 175 lb. mortadella! This year, they'll be bringing along some of the meats you'll find on our sandwich menu, like Mortadella, Dodge City Salami and the Pig & Fig Terrine, as well as their Stagberry, an elk and mead-soaked blueberry salami, and the Kitchen Sink sausage you'll find on Bar Pastoral's brunch menu. But who knows what else they might have in tow!

    UNDERGROUND MEATS

    Located in the heart of south central Wisconsin, Underground Meats sources the meat for their hand-crafted salami and cured meats from local, small scale, humane operations. The team at Underground Meats is also paving the way for future charcuterie operations, creating an open source handbook for salami producers looking to expand nationally.  We're really excited to add their Summer Sausage to the artisan salami selections you'll find in our charcuterie case - make sure you try some at the festival!

    When West Loop Salumi’s Greg Laketek trained under the famous Massimo Spigaroli in Italy, he brought the old world Italian traditions and recipes back to Chicago with him. West Loop Salumi is Illinois’ first USDA salumeria and they pride themselves on their quality ingredients and recipes. Try their Finocchiona, Pancetta and Chorizo and the Artisan Producer Festival.

    Pastoral Artisan Cheese, Bread & Wine and the Chicago French Market are proud to announce the 5th Annual Pastoral's Artisan Producer Festival at the Chicago French Market from 11 AM to 3 PM on Saturday, April 25, 2015.

Each year we are blown away by the support and enthusiasm of not just the producers that we and the other Chicago French Market vendors are proud to represent, but by the tremendous turn out by you, our loyal and wonderful customers.
    In addition to cheese-makers and mongers from around the world, there will also be producers of beer, wine, and accouterments. You'll meet confectioners, beer and spirit makers from right here in Chicago and around the world. The event will also feature artisan producers featured at Pastoral’s neighboring Chicago French Market vendors.

  • Letherbee Distilery - Pastoral's Artisan Producer Festival Highlights

    letherbeeLetherbee is an independent artisanal distillery founded as an outlet for a few exceptionally talented bartenders to create unique and signature spirits engineered to enliven the discerning drinker and stock the arsenal of the professional bartender. Their signature gin is distinct yet versatile and led the way to a range of craft botanical spirits – barrel-aged absinthe and BESK, a relatively obscure, locally infamous Swedish liqueur.

    Letherbee's spirits are brimming with incredibly robust, subtle and nuanced blends of herbs and botanicals. You can try some for yourself at Pastoral's 4th Annual Artisan Producer Festival.

  • Spring Brook Farm - Pastoral's Artisan Producer Festival Highlights

    farms for city kidsSpring Brook Farm in Reading, Vermont runs the Farms For City Kids Foundation providing an outdoor classroom where urban youth explore new dimensions of learning as academics are integrated into everyday farm activities that practice and teach sustainability.

    John and Janine Putnam studied their craft from an artisan cheesemaker in the French Alps a decade ago. Today, after several years of practice on their own Vermont farm, they are sharing what they have learned with the young students at Spring Brook Farm. The Farms for City Kids Foundation brings students to this dairy farm to participate in their interactive, agricultural classroom. The raw milk from the farm’s 40 Jersey cows is used to make 20 pound wheels of the complex and meaty Tarentaise that both the students and the American Cheese Society give top honors, along with their nutty, Alpine-style Raclette.

  • Forlorn Hope Winery - Pastoral's Artisan Producer Festival Highlights

    fornlorn hope wineMatthew Rorick is a champion of the lesser-known varietals, he makes small production bottlings from grapes like Verdelho, Trousseau Gris and Alvarelhao that grow clandestinely in small pockets throughout California. Rorick allows the grapes to speak for themselves instead of over- manipulating them in the winery.

    Forlorn Hope wines ferment via natural yeast, very little sulfur is added and there are no new oak barrels residing in the winery.

    At Pastoral we currently feature the ‘Que Saudade’ Verdelho. There are only 457 total cases of this rare creature which is fermented in neutral barrels and aged for 8 months before bottling. The resulting wine is bursting with peach and pear fruits. We like to describe this wine as in-between Chardonnay and Sauvignon Blanc. The wine has the weight and richness of Chardonnay but maintains beautiful acidity similar to a Sauvignon Blanc.

    WMMB LogoThe Wisconsin Milk Marketing Board is a nonprofit organization of Wisconsin dairy producers that promotes Wisconsin Cheese—made in 600 varieties, types and styles—along with milk and other Wisconsin dairy products. The board creates and executes marketing campaigns to consumers, food service professionals and retailers throughout the country.

    You can find several members of the Wisconsin Milk Marketing Board
    at our 4th Annual Artisan Producer Festival including, La Clare Farms, Saxon Creamery, Hidden Springs Creamery, Clock Shadow Creamery, Holland's Family Cheese, Uplands Cheese and Widmer Cheese Cellars. Thanks to the Wisconsin Milk Marketing Board's major sponsorship, Pastoral can keep the Artisan Producer Festival the largest FREE event of its kind.

  • Illinois Sparkling Co. - Pastoral's Artisan Producer Festival Highlights

    illinois sparkling co markIllinois Sparkling Co. is an independent craft winery making balanced, unique sparklers exclusively from grapes grown in Illinois. Each wine is hand-crafted in their Peru, IL winery using the labor-intensive, hands on traditional method used in the Champagne region for centuries.

    Mark and Terri Wenzel got their start as owners of August Hill Winery when it dawned on Mark that Illinois is a perfect region for growing sparkling grape varietals. Their goal is not only to make "world class sparkling wines", but to also show that great sparkling wine doesn't have to be stuffy or intimidating.

  • Quince & Apple - Pastoral's Artisan Producer Festival Highlights

    Clare and Matt of Quince & Apple Handmade PreservesQuince & Apple small batch preserves are a husband and wife duo making hand-crafted artisan preserves late into the night in their tiny kitchen in Madison, Wisconsin. Matt and Clare Stoner-Fehsenfeld are committed to sourcing local fruits and ingredients with which to concoct their beautiful, not-too-sweet preserves.

    They do everything themselves, and taste test every step of each batch, allowing them to incorporate and adjust for seasonality and varietal from batch to batch. Pastoral has enjoyed a wonderful partnership with Quince & Apple over the years, including savory sandwich bar favorites Shallot and Red Wine Confit and earthy Fig and Black Tea Jam.

  • Milton Creamery - Pastoral's Artisan Producer Festival Highlights

    milton-cheese-making-013Milton Creamery was established in 2006 as a partnership between Amish dairy farmers and the Musser Family. The Musser Family in Milton, IA uses milk from local Amish dairy farmers to create some of the most consistently delicious and award-winning cheeses today.

    The Musser family has trusted the cheesemaking to their son Galen, who has been in charge of cheese production since he was 16 years old - winning his first award at 17! The Pastoral favorite, Prairie Breeze not only secured Galen his first U.S. Cheese Championship award, but continues to be an award winning cheese to this day, with its crystalline texture and flaky shards of flavor.

  • Firelands Winery - Pastoral's Artisan Producer Festival Highlights

    Firelands2Firelands Winery
    is one of the oldest wineries in Ohio, producing wines from the Isle St. George Island north of Sandusky. A family run outfit that is the benchmark for wines in the region.

    The original wine cellar at Firelands, built in 1880 by the Edward Mantey family, has been incorporated into the present Sandusky facility. In 1979, the Mantey Winery was purchased by Bob Gottesman, owner of Paramount Distillers, who had a vision for a better Ohio wine product. His vision revived the lagging Ohio wine industry, and helped propel it into the future. With the addition of Claudio Salvador as wine maker, the wines have steadily improved and are now National and International award winners.
