We offer the highest quality, cut-to-order domestic and international specialty cheeses, freshly baked breads, perfectly chosen accompaniments and small production wines, craft beers, sandwiches, catering, and gift baskets. We opened our first store in Chicago's East Lakeview neighborhood in 2004. We subsequently opened two additional stores in the Loop and the Chicago French Market, have a thriving wholesale and online business, opened our intimate cheese and wine bistro, Bar Pastoral, and our retail store and full-service restaurant, Appellation, in Andersonville. FRONT OF HOUSE MANAGER- Bar Pastoral

The Front of House Manager is responsible for leading the front of house personnel and daily business operations of restaurant. At all times, the Front of House Manager exemplifies the Pastoral’s TLC customer service model. In addition to leading the staff, the Front of House Manager is responsible for ensuring guest satisfaction, managing non-food inventory, scheduling employees, ordering of supplies, and optimizing efficiency and profits through management by the numbers. The Front of House employees report to this Manager.

 Essential Job Duties

  • Cultivates and leads a diverse, inclusive, safe, and teamwork-driven workplace committed to offering unparalleled customer service, both to guests and to one another
  • Maintains guest satisfaction by monitoring, evaluating, and auditing food, beverage, and service offerings; initiates improvements; proactively presents sales generating ideas; builds relationships with frequent patrons
  • Accomplishes company goals through effective management; explores opportunities to add value to restaurant and job accomplishments; implements and measures programs that reduce costs and labor, create efficiencies, and increase profit
  • Works with Senior Manager of Operations to develop and monitor restaurant budget; establishes and maintains effective revenue management techniques to maximize restaurant revenue; creates and analyzes financial reports and communicates successes and challenges
  • Maintains operations by enhancing current policies and standard operating procedures pertaining to customer service and personnel management; implements improvements to heighten guest experience and employee satisfaction
  • Partners with Senior Manager of Human Resources in all matters pertaining to the full life cycle of employment with all Bar Pastoral staff
  • Analyze business results; create and distribute weekly analysis to report on results and action plans
  • Maintains a safe and sanitary facility by establishing, following, and enforcing highest standards and procedures; complying with health and legal regulations; maintains security systems
  • Performs other duties as assigned

 Qualifications

  • 1-3 years of lead management experience in a full service restaurant
  • Extensive knowledge of cheese and wine helpful
  • Commitment to outstanding customer service skills and operational excellence
  • Ability to build, develop, and lead teams; proven record of managing collaborative teams to success; ability to effectively delegate and hold teams accountable for results
  • Demonstrated financial ability; previous P&L management responsibility a plus
  • Proficiency in Microsoft Office; intermediate Excel skills required
  • City of Chicago Certified Food Service Manager
  • Knowledge of restaurant point of sale systems preferred but not required
  • Ability to work a flexible schedule of up to 50 hours a week, including nights and weekends

SANDWICH BAR AND COUNTER SALES ASSOCIATES

We are hiring for our retail stores for the summer! The seasonal positions will be from Monday, May 8 through Saturday, September 2 (dates approximate).

Our Sandwich Bar Associates will focus on fulfillment of sandwich and salad orders, catering and fulfillment prep, and provide outstanding customer service to all guests.

Our Counter Sales Associates will deliver impeccable customer service while educating Pastoral's customers about the fascinating world of artisan cheese, charcuterie, bread, and wines.

Some other things that you will do:

  • answer phones; take sandwich and catering orders
  • assist with opening and closing procedures
  • replenish the floor with merchandise
  • assist with catering and gifting needs
  • SMILE and have a good time- we’re selling products that make people happy!

 Requirements:

  • A positive attitude that exemplifies teamwork and excellent customer service
  • Willingness to study and learn about our always-changing mix of artisan cheese, wine, charcuterie, bread and accompaniments
  • Prior experience in the food industry and with small-batch, artisan food is preferred
  • Proficient knife skills
  • Must be able to work a flexible schedule including weekends and throughout the holiday season
  • If not already certified, must obtain Food Handler license upon employment
  • Must be able to stand for extended periods of time and lift up to 30 pounds

LINE COOK- Bar Pastoral

 Responsibilities include:

  • Perform daily duties such as prep, cook, and clean up
  • Prepare foods according to recipes and perform prep work as assigned
  • Ensure that food quality, quantity, freshness, and presentation meet demands
  • Ensure that walk-ins, freezers, and all food prep areas are kept clean and organized
  • Prepare, handle, and store food in accordance with Chicago Health Department regulations
  • Other duties as assigned

Requirements:

  • 1 year experience working in a from scratch restaurant kitchen required; minimum 2 years in a food preparation position
  • Experience with preparing items for broiling, grilling, frying, and/or other cooking methods
  • Demonstrated knowledge of kitchen conduct; excellent knife skills
  • Open availability - able to work days and/or night shifts
  • Must obtain ServSafe/Food Handler license upon employment
  • Must be able to stand for extended periods of time and withstand exposure to cold, heat, and water

PRODUCTION COOK- Fulton Commissary

Responsibilities of the Production Cook include production of Pastoral's housemade bulk food items as well as light receiving and inventory. The position provides a strong platform for future work on kitchen lines, or supplemental work for those with evening kitchen or restaurant jobs. The position can be set up as an internship for culinary students, depending on your school's particular requirements.

 Requirements

  • 1 year experience working in a restaurant kitchen or prep kitchen
  • Demonstrated knowledge of kitchen conduct; excellent knife skills
  • Open availability - able to work days and/or night shifts
  • Must obtain Food Handler license upon employment
  • Must be able to stand for extended periods of time and withstand exposure to cold, heat, and water
