SOUS CHEF- Bar Pastoral

Essential Job Responsibilities

  • Alongside Pastoral’s Chef, assist with the preparation, costing, and design of restaurant menus; help design new menu choices based on seasonal ingredients
  • Supervise all food preparation and presentation to ensure quality and restaurant standards
  • Develop new and existing back of house employees to restaurant and kitchen standards; provide consistent feedback to develop employees regarding safety and sanitation best practices, food preparation, and dish plating
  • Ensure a first-in, first-out food rotation system and verifies all kitchen stock and ingredients are properly dated and organized for quality assurance
  • Partner with Senior Managers of Operations and Human Resources with staffing needs, training needs, and employee relations issues as needed
  • Manage food and product ordering by keeping detailed records and minimizes waste, plus works with existing systems to improve waste reduction and manage budgetary concerns
  • Coordinate with restaurant management team on supply ordering, budget, and kitchen efficiency, and staffing
  • Other duties as assigned


 Requirements

  • 1+ years of experience as a Sous Chef, or equivalent experience
  • Understanding of various cooking methods, ingredients, equipment, and procedures
  • Excellent record of kitchen and staff management
  • Accuracy and speed in handling emergency situations and providing solutions
  • Working knowledge of various computer software programs (MS Office, restaurant management software, POS)
  • BS degree in Culinary Science or related certificate would be a plus

LINE COOKS- Bar Pastoral and Appellation

 

Essential Job Responsibilities

  • Perform daily duties such as prep, cook, and clean up
  • Prepare foods according to recipes and perform prep work as assigned
  • Ensure that food quality, quantity, freshness, and presentation meet demands
  • Ensure that walk-ins, freezers, and all food prep areas are kept clean and organized
  • Prepare, handle, and store food in accordance with Chicago Health Department regulations
  • Other duties as assigned

 

 Requirements

  • 1 year experience working in a from scratch restaurant kitchen required; minimum 2 years in a food preparation position
  • Experience with preparing items for broiling, grilling, frying, and/or other cooking methods
  • Demonstrated knowledge of kitchen conduct; excellent knife skills
  • Open availability - able to work days and/or night shifts
  • Must obtain ServSafe/Food Handler license upon employment
  • Must be able to stand for extended periods of time and withstand exposure to cold, heat, and water

SANDWICH BAR AND COUNTER SALES ASSOCIATES


Our Sandwich Bar Associates will focus on fulfillment of sandwich and salad orders, catering and fulfillment prep, and provide outstanding customer service to all guests.


Our Counter Sales Associates will deliver impeccable customer service while educating Pastoral's customers about the fascinating world of artisan cheese, charcuterie, bread, and wines.

Some other things that you will do:

  • answer phones; take sandwich and catering orders
  • assist with opening and closing procedures
  • replenish the floor with merchandise
  • assist with catering and gifting needs
  • SMILE and have a good time- we’re selling products that make people happy!

 
Requirements:

  • A positive attitude that exemplifies teamwork and excellent customer service
  • Willingness to study and learn about our always-changing mix of artisan cheese, wine, charcuterie, bread and accompaniments
  • Prior experience in the food industry and with small-batch, artisan food is preferred
  • Proficient knife skills
  • Must be able to work a flexible schedule including weekends and throughout the holiday season
  • If not already certified, must obtain Food Handler license upon employment
  • Must be able to stand for extended periods of time and lift up to 30 pounds
